Integrated Practices for Building Sustainable Cities
The Kitchen Talk "From Stem to Plate: Full Use of Food" is an invitation to experience the kitchen as a space for dialogue, creation, and transformation. The activity combines theory and practice in an interactive cooking workshop, with exchanges of knowledge and reflections on food security, sustainability, food culture, and the right to food.
The proposal seeks to raise awareness and build skills for the conscious and creative use of food parts that are often discarded—such as peels, stems, seeds, and leaves—expanding perceptions of their nutritional, cultural, and environmental value. More than learning recipes, it is a gathering spot to rethink habits, strengthen community bonds, and recognize the kitchen as a territory of resistance and care.
